
The challenge has been extended and I have happily accepted.
First, let me give you a little background…
It is rare that you will get me to admit that a frozen, store bought product is better than a fresh, homemade one. However, there is one product that I will admit is a shameful guilty pleasure – Stouffer’s Vegetable Lasagna.
Yes, yes, I know it’s full of preservatives and fat, but honestly, it tastes so good. This is compounded with the fact that it is hard to find a good vegetable lasagna these days. Often times they are too dry, vegetables too soggy or a combination of both. Stouffer’s, however, has managed to master this product – with the magic of preservatives, I presume.
Which leads me to my latest challenge – make a vegetable lasagna that is fresher, healthier and tastes better than the store bought, secret guilty pleasure variety.
It seems pretty straightforward, but you never know what can happen when you start experimenting in the test kitchen. Either way, I will not stop until I have a vegetable lasagna that I am satisfied with.
