
I needed a quick meal the other night and suggested homemade pizza to my wife. I knew we had everything on hand and she suggested a new flavor combo that sounded strange at first, but ended up being pretty darn tasty. She requested a combination of pizza and BBQ sauce topped with feta, monterey jack and mozzarella cheese. It sounded salty and a little bit sweet; definitely in my wheelhouse. It turned out great and I am anxious to try it again on some homemade crust. I think next time I’ll either add an additional salty component – olives or perhaps some capers or something with some spice. I had a haberno in the fridge, but thought that might be a little much. Either way, give it a try when you want pizza but are in the mood for something a little different.
Crust (Boboli) – I used regular Boboli crust – normally, I’d make my own but for a quick weeknight meal, store bought is the way to go.
Sauce – 2 parts pizza sauce (I made mine with tomato sauce, tomato paste, garlic and onion powder, S&P, basil and oregano)
1 part sweet BBQ suace – I used Sweet Baby Rays
Topppings:
Sliced mushrooms
Thinly sliced radishes
Thinly sliced shallots
Chopped cilantro
Equal parts mozzarella, monterey jack and feta cheese
