Fried Zucchini with Homemade French Dressing

I had a zucchini in the fridge that I didn’t know what to do with and this came to mind; takes me back to my childhood and fried zucchini at Dino’s Pizza and at home, made by my mom. Enjoy!

 

1 zucchini, cut in half and sliced lengthwise into 1/2 inch thick slices

1/4 cup whole wheat flour

1 tsp salt

1/2 tsp freshly ground black pepper

1 egg

2 tbsp milk

3/4 cup bread crumbs

1 tsp dried oregano

1 tsp dried parsley

1 tsp dried basil

1 tsp dried marjoram

Vegetable Oil

 

Season flour with salt and pepper; mix well to combine in a shallow bowl or plate wide enough to fit zucchini slices.

 

Place egg and milk in a shallow bowl or plate and beat lightly with a fork.

 

Season bread crumbs with oregano, parsley, basil and marjoram; mix well to combine in a shallow bowl or plate.

 

Working in batches dredge zucchini in flour, shaking off excess, then in the egg mixture and finally the bread crumbs. Make sure zucchini are evenly and uniformly coated with bread crumbs.

 

Once all zucchini have been breaded, add 1 inch of oil to large skillet over medium-high heat. When oil reaches 375 degrees add several zucchini and fry until golden brown on both sides, about 6 minutes, flipping once halfway through. Drain on paper towels; serve with French Dressing (recipe below).

 

French Dressing

1/4 cup mayonnaise

2 tbsp white vinegar

1/4 cup ketchup

1 tsp paprika

1 tbsp Worcestershire sauce

1 tsp dry mustard

1 tsp lemon juice

1/2 tsp salt

1/4 freshly ground black pepper

Combine all ingredients and whisk well to combine.
