Roasted Lemon Dill Salmon

Try this simple and quick recipe the next time you’re in the mood for some seafood.

2 skinless salmon fillets, about 4 – 5 ounces each

2 tablespoons butter, softened (not melted)

1 tbsp chopped fresh dill (1 tsp dried)

1 tbsp fresh lemon juice

1/2 tsp Salt

1/2 tsp freshly ground black pepper

1 tsp lemon zest

Preheat oven to 375 degrees.

In a small bowl combine butter, dill, lemon juice, salt and pepper. Mix well to combine. Place 1 tablespoon of this mixture in a separate bowl and set aside for later. Rub all sides of the fillets with the remaining butter and dill mixture.

Place in a lightly greased glass baking dish. Roast until cooked through, about 15 – 18 minutes, basting the fillets once, halfway through the cooking time, with pan drippings.

Remove from oven and season the fillets with the remaining butter and dill mixture. Garnish with lemon zest.
