
Sometimes I just want to write a quick post about a spontaneously created recipe. I find that inspiration and recipes sometimes come quickly out of nowhere, which influences my desire to write a fast post. No fuss, just a photo and the recipe. For now, I am calling these posts, “Quick Hits.” Straight and to the point. The first installment is Bark. I needed a quick dessert the other day and bark came to mind. I had some chocolate on hand and with a little browsing of my pantry I was able to come up with two different types of bark in no time at all. Sorry for the sub-par picture – I had to snap it fast while my guests hovered over the plate of chocolate goodness.
Quick Hit Post – Mint Oreo Bark and Pretzel, Dried Cranberry Bark
Ingredients:
- 1 12 ounce bag semi-sweet chocolate chips
- 1 12 ounce bag white chocolate chips
- 6 mint Oreos, broken into pieces
- 1/4 cup dried cranberries
- 1/2 cup pretzels, broken into pieces
- Kosher Salt
Directions:

Line a sheet pan or cookie sheet with a piece parchment paper and set aside.

Using a double boiler or the microwave, carefully melt the white chocolate chips. When completely melted, pour onto parchment paper and smooth out into an even layer. Let cool for 15 – 20 minutes until hardened.

While the white chocolate cools, use the same method to melt the semi-sweet chocolate. When completely melted, pour on top of the white chocolate and smooth out into an even layer. Working quickly, top half with the Oreos and the other half with the dried cranberries, pretzels and a pinch of kosher salt.

Refrigerate for 3 hours. When ready to serve, break into bite size chunks.
