
I love this creamy and tangy twist on a steakhouse classic. In this recipe, I use fresh spinach and add some bacon for a hint of smokiness. The classic creamy texture is given a kick of tang with the addition of crumbled goat cheese. Just in time for Valentine’s Day – serve this with your Valentine’s Day meal for your sweetie and look like a stud in the kitchen – even though the recipe is a cinch!
Quick Hit: Goat Cheese Creamed Spinach
Ingredients:
- 1 ½ tablespoons low-fat cream cheese
- 1 tablespoon of sour cream
- 2 tablespoons of goat cheese
- 2 garlic cloves, minced
- 2/3 cup skim milk
- 3 strips of bacon, sliced into bite size pieces
- ¼ cup chopped onion
- 2 tablespoons of flour
- 3 1/2 cups of fresh baby spinach, stem removed and roughly chopped
- ¼ cup chicken stock
- 2 tablespoons breadcrumbs
- 2 tablespoons Parmesan cheese
Directions:

Combine cream cheese, sour cream, goat cheese, milk and garlic in a small bowl; mix well.

Cook bacon in a medium saucepan over medium heat. Just before bacon begins to brown, add onions and flour. Let cook for two minutes; stirring constantly.

Add cheese and milk mixture; cook for one minute; stirring constantly

Add spinach and stir to combine.

Add stock and cook for 3 – 4 minutes, until spinach has wilted a little bit.

Remove from heat and pour into individual ramekins or a round glass baking dish. Top with breadcrumbs and parmesan cheese.

Broil in oven for 4 – 5 minutes until cheese has browned.
