Quick Hit: Garlic Roasted Zucchini

This is such a fast and easy side dish that I am not sure what to say about it.  I guess I could say that these roasted zucchini are the perfect side for a busy weeknight when you need to get something on the table fast, but want to make sure your family is getting the nutrition they need.  One zucchini will feed two people.  So, for a family of four, pick up two decent sized zucchinis.  Not only is this a fast recipe, but it is cheap!  Talk about five ingredients or less – wish I would have come up with that phrase first – especially for this recipe!  Enjoy!


Quick Hit: Garlic Roasted Zucchini

  • 2 medium zucchini, sliced into ½ inch rounds
  • 1 ½ tablespoons of olive oil
  • 1 clove of garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper


  1. Pre-heat oven to 375 degrees.

  2. Toss zucchini with olive oil, garlic, salt and pepper and spread in single layer on a sheet pan, sprayed with non-fat cooking spray.

  3. Roast 12-14 minutes, turning over once half way through cooking time.  Remove from oven and serve immediately.
