I snapped a few pictures while preparing food for my latest private dining event. The menu was:
- Crab Cakes with Remoulade Sauce
- Roasted Asparagus with Garlic Oil
- Individual Three Cheese Mac & Cheese
- Braised Short Ribs with Gremolata
- Shortcake Dessert Pizzas with Raspberry Coulis, White Chocolate and Strawberries
All in all the event was a great success and not just because of me. This event was somewhat unique in the fact that due to a prior engagement, I could not be on-site to actually cook the food as I normally would. This event required me to write a menu that was not only delicious, but also allowed me to do all of the prep and let the client put the finishing touches on. Based on these pictures, I think we both did great!

After all the short ribs were browned, I braised them in the oven for 2 1/2 hours. Cooled them in the braising liquid overnight. All the client had to do was heat in the oven for 30 minutes and then serve!

I breaded and formed the crab cakes and put them into buttered muffin tins. Then, I topped them with a few pats of butter. The client warmed the crab cakes in the oven until golden brown and topped with remoulade sauce. Easy peasy.

I seasoned the asparagus with salt and pepper. I gave the client some homemade garlic oil, which she drizzled over the asparagus before roasting for a few minutes.
