I often get asked for suggestions on what to grill besides burgers, dogs and brats and I usually respond, “Chicken thighs!” Boneless, skinless chicken thighs are economical, tasty and very hard to mess up! This recipe calls for 1 1/2 pounds of boneless, skinless thighs, which usually costs around $5 – $6 and will feed 3 – 4 people – can’t beat that! The best part about this recipe is its simplicity. Once you season the thighs, you can throw them on the grill and forget about them. Pair with a potato salad and some grilled corn and you have a great, hassle-free meal!
1 tsp salt
1/2 tsp freshly ground black pepper
1 tsp garlic powder
2 tsp paprika
1 tsp onion powder
1/2 tsp dry mustard
1/4 tsp ground cayenne
1 1/2 pounds boneless, skinless chicken thighs
1 bottle of your favorite BBQ sauce, I recommend Sweet Baby Ray’s
Heat grill to medium heat.
Combine first seven ingredients in a bowl and mix to combine. Using your hands rub spice mixture all over chicken thighs. Place thighs into a foil-lined, grill proof dish. Grill for 20 minutes. After 20 minutes, brush thighs with barbeque sauce. Grill for another 5 minutes and then remove from grill. Brush thighs with more sauce and let rest 5 minutes before serving.
